I had been meaning to publish this post, and then I found this video showing how to make the sauce for Calçots and explaining what calçots are and how to cook calçots. The truth is that it is a great video and very well done.

The ingredients used by El Cocinero Fiel are:

Ingredients for the sauce:

  • Ripe tomatoes (tomacons),
  • hazelnuts, almonds, garlic,
  • dried choricero or ñora peppers,
  • Maria biscuits (or bread or carquinyolis, Catalan almond biscuits),
  • vinegar, olive oil and salt

I hadn't thought of using Maria biscuits; that slightly sweet touch must be nice. 🙂

We have a recipe that my grandmother gave me. Who are the best cooks in the world? Grandmothers. :P.

I find them lately in powder prepared to directly make the sauce, so yourselves to your liking.

Can Pepitu Calçots Sauce Recipe:

  • 100g toasted almonds
  • 30g toasted almonds
  • ¾ of a glass of arbequina oil D.O Siurana
  • Vinegar that we will only use to moisten the toasted bread
  • 1 piece of toasted bread
  • 1 ñora or dried choricero pepper.
  • 1 head of fire-roasted garlic
  • 5 ripe red tomatoes or 4 large ones also roasted over the fire.
  • Salt to taste.

Preparation:

  1. We roast the head of garlic and the tomatoes on the fire,
  2. Peel the roasted tomatoes.
  3. We wet toasted bread with vinegar
  4. We add everything to a pot and blend with a hand blender. Until we achieve the desired consistency.

And voilà! We already have good good sauce for about 7-8 people.

If you have any variation or different sauce, you can send it to us at info@calsotada.com and we will publish it.
