About 3 years ago I already published how to cook calçots at pepitu.com. I was just discovering calçots back then. 😉 Now that I have a website devoted to them, it's time to explain how I cook them.
We will update the photos as we have the ideal ones.
What do we need?
- Grill, In my case, since the calçotadas I make are quite multitudinous, I use an individual mesh bed base. Likewise, my father-in-law is making one for me with construction rods and a chicken wire base.

- Wire: Yes, many do not use it, but in my case I learned to make them like this, and I don't know... for me it is the best way, and it is to thread them as if it were a bracelet of calçots, we load it more or less for the width of the fire that we make. You can also use a meat grill... but it is not the same. We can also put them on the grill and move them by hand, but be careful! 😉

- Firewood: The best wood for cooking calçots is grapevine prunings, called sarmientos or sarments. They give a good flame for roasting. Fine, dry wood that burns well can also work. Remember that pallet wood can be treated or contaminated with debris and could ruin the calçots.
- And calçots many calçots! he he.

To Cook:
- We prepare the calçots with the wire, we put the firewood on the ground or area to burn.
- We light everything, we put the grill we use and quickly put the calçots on top.

- Keep in mind that the outside has to be black, burnt and the inside is like a pickled onion and it is normal for it to sweat water while it cooks.
- We will have the Calçots approximately 10-15 minutes with the heat on full so that they are well cooked.

- We wrap each group of Calçots that we roast with newspaper to keep them warm.
And EAT!!
Note: This note will be modified as we have more detailed information, but I think you already have enough to get started. If you want to add something you can leave it in comments.
